pancakes made on crepe maker

Eggless Pancakes / Flapjacks (mini) Healthy version

Ingredients

 

 

75g cake flour

75g brown bread flour   OR

(135g cake flour + 15g digestive wheat bran)

30 g sugar

3 teaspoons baking powder

1 cup low fat milk

2 tablespoons oil

10 g melted and cooled butter

60 ml of water (add more if batter is too thick)

 

Method

Blend all the ingredients together with an electric mixer.

Cook on a non tick surface (crepe maker works well)

on medium heat.

 

Turn once the top is full of air bubbles and the bottom is golden brown. Cook on the other side (cooks quickly)

 

Recipe above makes 18 - approc 60 calories in each (plain)

 

Serve with syrup, cinnamon sugar or any toppings of your choice
